Wordful Wednesday- Our County Bee Keepers

Okay I have a hard time not sharing, so I thought I would make this post a Wordful Wednesday one.You can visit Seven Clown Circus for a look at more.

Now Honey is a great tasting food. Everyone I know loves it. There are so many different flavored ones, some are produced by the flower bees, then you have the wild ones. In our area we have bee keepers. Every year the county Fair has entries.

Last year we purchased this one.

When we had a bad cough and could not shake it , the doctor told us to take a tablespoon of honey. The properties in the honey work wonders for coughs. So we open the Fair Honey and boy every one loved it. You know it worked wonders on that cough. After that I used it a lot in cooking and hot teas as well as a spoonful every now and then for medicinal reason.

This year there was a new honey from the wildflowers bees that took first place. So I had to purchase some.
Here it is.

I was able to get a 2 pound size of last years winner as well. I did not see any out, but then I saw the beekeeper put two jars out. Before one could say Bee, I was scooping it up. Now you know every year the taste changes. That the great thing about local fresh honey. We haven't opened the jar yet. However I know it will be just as good. The Bees had a great year.

Buying local also means it is fresh. Still supporting the local Bee Keepers and It's an all American products. The phone number and address are on the jars, you can call them and see if there is still some available. Hurry before they sell out, Tell them Auntie E sent you.

Got Evidence- Part 2- FDA's Role

So now what is the FDA's (Food Drug and Alcohol) role in deciding if and how much is safe?
Their role is to make sure there are enough rigorous testing on the product. Then they will list the Acceptable Daily Intake (ADI). This number is derived from the testing, if it's animal testing the number is set at 100 times lower than found safe for the animal.
Now I bet you what to know what the ADI for Diet Drinks are.

For a 12 oz drink of Diet soda ;
  • containing Aspartame=18-19 cans
  • containing Acesulfame K=30-32 can
  • containing Sucralose= 6 cans
  • for Saccharin it is 9-12 packets
  • Stevia has not be determined yet, they have not set a ADI for it.
Even though these Number have been set, the manufacturers vary on the amounts used. therefore it is hard to determine the safe amount to consume in a day. Take for example the amounts in a 8 oz serving size of the following canned sodas;

Just containing Aspartame
  • Diet coke has 125 milligrams of Aspartame,
  • Diet Pepsi has 118 mg
  • Diet Dr Pepper numbers are 123 mg.
If we look at the brands that mix the sweeteners,the Numbers are closer;
  • Coke Zero has 58 mg Aspartame, and 31 mg of AcesulfameK
  • Sprite Zero and Fresca has 50 mg Aspartame and 34 mg of AcesulfameK
  • Barq's Diet Root Beer has 66mg of Aspartame and 41 mg of AcesulfameK
Diet Mountain Dew has 57mg Aspartame and 18 mg AcesulfameK as well as 18 mg Sucralose .
Tab is one with Saccharin and Aspartame, it contain 64mg of saccharin and 19mg aspartame.

Fountain drinks can have different amounts, for lables are not shown and they work on a more concentrated syrup, using a soda water to mix with the drink. That makes it hard to know due to the difference in restaurants equipment.

However you look at it the FDA's role is only to apply the facts for our safety of consumption. Some times the research is limited and the fact are not truly revealed until years later. Case in Point, Saccharine. A known carcinogenic today but in its' earlier time considered a healthy choice.
Today the consumer will have a hard time determining the amounts they consume. Making it difficult to stay within the ADI recommendation of the FDA. With all the sweeteners found in Baked goods, Snack, cereals and other Low calorie food we consume... one will not be able to discern the amounts. Our packaging does not (to date) have all the Milligrams used in the product. The Names are only listed in the ingredients.

So the question remains, do we drink the diet drink ? Or are we risking our health if we do? Research has shown that the consumption of these diet drink can actually contribute to Diabetes Type 2. One will have a 67% greater chance of developing it.
Monday we will look at some of the other studies and how they can effect our health. We all need to stay informed to live healthier lives.

Tuesday Post It


I am always writing on Post it notes. I have a few in my house scattered around in rooms. Supahmommy thought it would be fun to do a post using the Post-It Notes. Supahmommy has a neat link system on her blog go check it out Here.




I have been working on the New Fitness Log blog for a week now. Posting food and exercise logs, as well as sharing some information I learn along the way. After much consideration decided to open it up to all. The process to invite and have people log in seemed too time consuming. My hubby helped me look into the process of someone visiting the page. I did not like the setup. So I will open it up, take a look see if it is something you would like to visit. I do post daily and some times more than once.

Answer to friday's Question

Yes, everyone was right! One should weight Weekly. The Calorie intake varies from day to day. At the end of the week one will loose about 1.5 lbs. Now with that said a better way is to step on the scales every two weeks. I know when we are trying to loose the weight we want to step on more. However, the real measurement is your clothes. One will notice that those pants feel better or your arm fell great not to tight in that shirt.
What is the desired method of loosing weight and inches? Take the weight goal you have, let's say 140 lbs, multiply that by ten. That will give you 1400, this is the amount of calories you should consume in one day.
The next thing to do is Log the calories you intake each day. If you are not eating that many calories in a day, you will need to get there. This is the key, one must eat the caloric amount to get the body out of the starvation mode. This will take about a week or two. At that time the brain will reprogram itself and stop storing fat, for that raining day it thinks you will have (no food). Our body is programed that way to get us through famines.
So the reprogramming of the mind and our changing in the thoughts of dieting will help one to succeed in our weight lose. Now one must continue to eat their caloric amount forever. Once you are doing that, when you get to your desired weight, and you will, you will be able to maintain it.

Living Healthy Through the Hoildays

Will it be a hard time to stay healthy through the Holidays? In today's Lifestyle that will be the main theme on all the Networks Shows. Every Year about this time people can't wait to have all the comfort Holiday foods.



You know the types;
  • Turkey and Moms Stuffing
  • Ham deck out with pineapple, brown sugar and cloves
  • Lamb for some
  • Cranberry sauce
  • Sweet potatoes with Marshmallow topping
  • Mash potatoes with Gravy
  • Potato cakes with apples sauce and sour cream
  • Green bean casserole
  • Pumpkin Pie
  • Pecan Pie
  • Apple cranberry Pie
  • Mincemeat Pie
  • chocolate- Any kind
  • Nuts
  • Gingerbread houses
  • Eggnog
All these are high in Fat and Carbs. So what are we to do? You know we will be eating these things. Holidays dictate it and what kind would it be if we did not eat these foods?
I love the holidays and it traditions, just could not enjoy it without them. Sure we can modify them, as seen on some Network shows, but it would not be the same. Let's Face it, this time only come along once a year. If we can manage a little control and not over doing it, we will be fine.
We can exercise a little more in the yard or in the house. Clean out the closets, get rid of the coats (the coat drives are out), do a Winter cleaning verses a spring cleaning of the whole house, Get those decorations up and start to bring in the Holidays with a healthier energy. Yes we can enjoy this seasons Holidays and still keep a Healthy Lifestyle.

Our Sweet Tooth- Our Weakness

Why is it that we have such a Sweet tooth? I got to thinking while on vacation, How come those desserts sound so good, Cotton Candy at the fairs are a must, Candy Factory's are such fun and samples are every where. We went to a Old time Fourth of July Party and don't you know there was cotton candy for only 2 dollars.

Then we visited Patsy's chocolate factory in Colorado. The history was they started out making flavored Popcorn and Cotton Candy then moved to taffy (the kind that does not stick to the teeth), later came the chocolates. It was a small factory they gave tours,so we went on it. The owners fed us Freshly made Flavored popcorn, Taffy( which we watch him make and had it right off the machine), Then came the freshly made chocolates. I will say it was very good!! White water rafting wasn't any exception cookies were awaiting us after all that hard work. On every tour we took there was sweets. Cookies, candies and if that weren't enough there was the mountain ice cream.
It seemed that every where we went people where handing out Sweets.
Even at the Bubba Gumps store they were handed out samples of Mama Gump Kitchen Gourmet Chocolate, you know from the movie " Forrest Gump". Forrest Pinned the phrase "Life a like a box of chocolate, you never know what you're gonna get."I tried not to buy a box.


After each dinner there was that question " Did you save room for dessert?" We ate at this one place called "Pine Country Restaurant", on route 66, they were known for their Pies. Oh not just a couple pies but a list so long it had it own Menu. When the pies came to you it was not skimpy I believed 3 people could of enjoyed one piece and been satisfied! We ended up taking the pie pieces back to nurse on them for two more days!
So here we are five pound heavier than when a started on the trip. I am sure it was all the sweets!! Why are we so weak when it comes to the sweets?

If I Could Blog Back Time- Cooking Stories

over at Lola's Diner today topic is "Worst Cooking Disasters". Every Thursday there is a topic spoke of in the Diner, Grab a cup of Joe and a Seat and come on in..Join the conversation. Link up at Lola's Diner.

It was the early 60's Mom was in the hospital, I am the only girl in of family of 3 boys and a Dad. This was the first time Mom was not home, She had always done the cooking. Dad ask me to cook so, I decided I could make Pancakes. That should be easy, use Betty Crocker Pancake Mix. Heat the Pan on the stove and pour the cakes into the pan. So the pan was hot I mixed the pancake mix and put it in the pan...For some of you younger folks we did not have non-stick pans! and There wasn't Microwave pancakes out, Heck there wasn't even a Microwave in our town! So the pancakes stuck to the pan and burned black. Dad made me clean the pan, it took me days!!! and I used SOS pads! Now my brothers did not want me to cook for them again.
This is another cooking story. It was also in the 60's, after the Pancake episode. Wanted to make a cake. Easy right? Betty Crocker Cake mix. I prepared the pans this time, greased and floured. The cake came out perfect. All were very pleased. Needed to ice it, did not know you needed to wait until it cooled! So the icing disappeared in the cake. Just a sugary mess. My middle brother,to this day, will not let go of that memory.
Now onto the Whip cream. Same Year, Mom made whip cream from the cream on top of the Fresh milk. She thought is would be easy for me to make...Okay I put the cream into the mixing bowl added sugar and turned on the electric beaters. Let it beat until it looked like whip cream. Who knew I could make sweet Butter!

My First Cooking tries did not turn out too good. My family still to this Day, Speaks of them. By the way did you know I have a CookBook Website? Yes I have learned how to cook Pancakes from Scratch, Bake cakes one can enjoy with great frosting, and even learned how to make Whip Cream from Scratch. I will say I have become such a good cook that all have gained plenty of pounds. Now I am learning to cook for health and to aide in losing pounds with out starving. I have come a long way for my beginning cooking years. Still learning and still have disasters once in a while.

Depression versus Weight control

I have really gone off the track. It is not that I have been gaining weight as much as I have not been in control of my habits. I have the backwards sliding syndrome. You know the one, childhood comfort foods. Or a better description, Preteen eating. When you could eat anything and it would not effect you!! It has been a Struggle to continue to loose weight. The plateau is not my problem! I have been really missing Mom. So, my depression is the real problem. I just do not feel like cooking, eating or shopping for food. Therefore when I need to eat, whatever I have in the house get eaten. And there is a lot of Chocolate!!! Okay hear comes the justification. Chocolate helps lower your blood pressure. Chocolate is good for the Memory , a new study showed ... dark chocolate has been associated in boosting the memory skills. The antioxidants in dark chocolate are good for health, keeps you from getting sick. The more antioxidants the better,right? So,the problem lies in... if that's the only thing in the house then I am in trouble!!!

The mourning period is different for everyone, I just get an overwhelming feeling of loneliness. Mom and I were a "loose the weight" team, I no longer have that. We went on Adkins together and lost over 40 pounds each. Then mom got cancer and Adkins went out the window. Comfort food came back into our lives. Dealing with the Chemo and Pain caused the food choices to be more child like. So, I gain weight, Mom lost weight. After the first chemo go round I just wanted to get back to loosing the weight. I tried the Southbeach plan. Something in the food, probably the Soy or Splenda, caused a reaction to my skin. I looked like I was being beat up. My eyes were in trouble. One year going to the eye doctors and being put on Steroids. Only to be a temporary fix. I stopped all the soy and Splenda products. Went back to raw sugars and heath food items. One year later my eyes and skin are finally better. Now this is the largest problem. Every Diet, Protein, low calorie or Diet control drinks have Soy or Splenda(sucralose)in them. Some have Maltitol Syrup in them which does havoc in my bowels. All the Programs, Weight Watchers, Jenny Craig, Nutrasystem and others have the products I listed.Therefore I have to make every thing from scratch.

Back to the cause, My depression is interfering with my weight control.I get so down that I can't even finish shopping. I will leave the cart and come home with nothing. Anything can trigger that feeling!! I really hope I will be able to shop tomorrow. My Cupboards are getting bare and the refrigerator is looking empty.
